QUICK PLUM CAKES:
INGREDIENTS:
Butter 4 oz.
Self raising flour 5 oz.
Sugar 4 oz.
Eggs 4 nos.Milk a little
Mixed dry fruits and nuts 1/2 lb.{raisins,currents,peels,walnuts}
Method: Chop the fruits. Cream butter and sugar together add the flour and eggs alternately and beat well. Stir in the fruits and add enough milk to make the mixture drop easily from the spoon. Put in a well greased tin and bake at 220 C for thirty minutes.
RICE CAKE:
INGREDIENTS:
Ground rice 1/4 lb.
Flour 1/4 lb.
Sugar 1/2 lb.
Butter 6 oz.
eggs 4
Method:
Mix sugar,rice,butter and flour together.Then add whites of egg beaten to a stiff froth.Beat mixture till it begins to look white,then add beaten yolks mix well and bake at 220 C till done.
EGG LESS FRUIT CAKE.
Ingredients.
Plain Flour 1 cup
Sugar 1/2 cup
Butter 1/2 cup
Whole Milk 1/4 cup
Raisins 2 tbsp
Honey 1 tbsp
Yogurt 1/2 cup
Baking Powder 1 tsp
Method: Preheat oven at 180 c .Sieve flour and baking powder.Beat butter and sugar,add honey and yogurt and rest of the ingredients. Greece the dish and pour the batter and bake at 180 c for 30 minutes or till done. Cool and serve.
